Ingredients:

  • 2 handfuls lettuce (baby, or arugula, washed and dried)
  • fresh basil leaves (roughly chopped, optional)
  • 12 lemon (juiced, about 1 1/2 tablespoons)
  • 2 tbsps red wine vinegar
  • 1 tsp dijon mustard
  • 12 cup olive oil
  • pepper (Salt and)
  • salt (and freshly ground black pepper pepper)
  • 2 ozs ricotta salata
  • boneless chicken breast halves (skinless, about 1 3/4 pounds)
  • large eggs (beaten)
  • 12 cups bread crumbs
  • 14 cup olive oil
  • 12 lemon
