Norwegian traditional fish recipe


This dish is extremely easy to make, very tasty and a great way to include healthy fish in your diet. To feed 3 - 4 people you will need:
 

Ingredients:
1.5 lbs of cod fillet (preferably fresh with skin, but frozen will also work)
4 eggs
1 cup of butter
6 carrots
potatoes
parsley
salt
 

Method:
Start by cleaning the potatoes and bring them to a boil in a large pot of lightly slated water.

Boil the eggs until they are hard boiled (about 10 minutes, don't let the yolk turn green).


Boil water in a large pot and add a little salt. Turn the heat to low and wait until the water stops boiling before adding the fish fillets. Don't let the water boil, but let the fish coddle for 7 - 10 minutes.


While the fish is coddling, rinse and slice the carrots and add them to the pot with the boiling potatoes.


Melt the butter and add finely chopped parsley and the diced hard boiled eggs.


Remove the fish from the water carefully and let it drain over some paper towels. Place the fish on the plate and remove the skin if necessary (if the fish is done the skin will come off very easily). Serve with carrots and potatoes and cover in the egg-butter mixture.


This is as traditional a Norwegian meal as you will ever find. It is completely primal (feel free to ditch the potatoes if you're the nightshade dodging kind) and absolutely delicious!
