Mexican Pizza

1 onion, chopped
2 tbsp olive oil
1 (15 oz) can black beans, rinsed and drained
1 (4 0z) can diced green chiles
2 tomatoes, chopped
1 tbsp cumin
1 tbsp chili powder
8 (6 inch) corn tortillas
1 (15 oz) can vegetarian re fried beans
1 cup shredded cheddar cheese
1/4 cup chopped green onion
1 (4 oz) can black olives, pitted & sliced
Sour cream and/or guacamole for topping

1. Preheat oven to 350 degrees F.
2. In a large skillet, heat 1 tbsp olive oil on medium heat. Cook onions until slightly translucent, about 2 mins.
3. Add black beans, tomatoes, and spices to skillet and cook until warm. Lower heat and simmer for 5 mins.
4. In another skillet, heat 1 tbsp olive oil on medium heat. Fry one tortilla for 15 seconds, then flip and fry the other side for 15 seconds. Repeat with remaining tortillas. Arrange 4 on a baking sheet and reserve 4 for toppers.
5. Spread a layer of re fried beans on the tortillas on the baking dish. Then spread a layer of the black bean mixture and a thin layer of shredded cheese. Top with remaining tortillas.
6. Bake for 20 mins.
7. When ready, top with green onion, black olives, and remaining cheese. Serve with sour cream and/or guacamole.
