Ayam Penyet and sambal recipes

It’s an Indonesian dish called “smashed chicken”.

Recipe for ayam penyet
6 chicken thighs
5 tbsp all-purpose flour
2 tbsp cornflour
Oil for deep-frying

Recipe for marinade
9 candlenuts
10 cloves garlic
20g turmeric
40g old ginger
2 tbsp coriander seeds
2 tsp sugar
2 tsp salt


Use a mortar and pestle to pound and grind the ingredients for the marinade.

Use it to marinate the chicken with for at least three hours or overnight.

Fill pan with enough oil to cover half the chicken.

On a plate, mix the all-purpose flour and corn flour. Coat the chicken thighs with the flour mixture.

Heat until the oil bubbles gently.

Put the chicken in the oil. Fry each side for 10 minutes until they become browned.

Drain on kitchen paper.

Before serving, use a pestle or side of a cleaver to "smash" the chicken.

Serve with rice, with the sambal chilli on the side.

5 red chillis

16 chilli padis

1 tomato

3 cloves garlic

3 tbsp cooking oil

1 tbsp sugar

1 tsp salt


Heat oil in pan and fry the ingredients until softened.

Pour the cooked ingredients into a mortar and pound.

Add sugar and salt to season and mix well.
